Emma told me that quite a few people had been wanting the offered sushi... which is giving me wicked ideas about building on that,

like:
-doing a
sushi 'tombola' from time to time (or quite frequently even...) (or maybe going together with specific events that gather a substantial number of 'clientele', such as band gigs, or the golden hour)
- using a
tombola to get rid of the remaining sushi at the end of a day (say by 8pm and making sure that the amount of money gathered must be enough at least to cover for the price of it if sold properly... (that way the sushi will not be left for consumption of volunteers the next day and I can be sure that every day there is a need for me to make one in the morning... -don't worry: sushi keeps much longer than normal rice because of the vinegar in it: the tummies of volunteers do not suffer but it is not enough good for the public

)
- how about
spilling the offer of a sushi tombola into the street... to passers by and travellers in the bus shelter??) -we could put a makeshift one on the table by the window, in the style of those Japanese restaurants, with the anouncement of the tombola...

-
In general maybe Emma could give us info on what prizes were people keen on and work on them...
I CAN SEE THE MacFOREST GROWING AND GROWING, which should make us think at this point, before it happens:
is this growth going to be organic?
is this a native species?
is this sustainable in the future?
I personally think the answer is yes to all those boxes.
